Pedro's monster cookies
Serves: 8 monster cookies

Ingredients
- 1 cup or 125g cold butter cut into small cubes
- 1 cup sugar : 100g muscovado + 100g vergeoise
- 2 Eggs
- 3 cups of flour (T45)
- 2 teaspoons baking powder
- 1 teaspoon cornstarch
- 1 teaspoon baking boda
- A good pinch of flaky salt
- 1 cup black chocolate chunks
- 1 cup mix caramel and milk chocolate chips
- 3/4 cup pralin
Instructions
In a large mixing bowl with the “K”, cream together the cold butter and the sugars for 4-5 minutes
Add eggs on at a time, mixing well after each one.
Stir in flours, cornstarch, baking soda, and salt. Mix until just combined to avoid overmixing.
Stir in chocolate chunks and chips + pralin.
Make 8 monster cookies.
Preheat the oven to 210°C degrees
Bake them 4 by 4 for 11-12 minutes, the cookies should be golden brown on the top.
Notes
You can freeze the dough, in that case, let the cookies defrost in the fridge and bake them for 14-15 minutes.
Let them rest for 15 minutes before eating. They’re best served warmed
